Nikiti Dream Olive Trees

Nikiti Dream is home to 300 olive trees that produce both olive oil and edible olives. They are located on the top of a hill, just 1 km from the sea, in a quiet and pristine area.

The trees are not treated with chemical products, ensuring that the fruits are completely natural and organic. Our olives are carefully handpicked or as we like to say on our bottle label “handpicked with a lot of love.” We avoid using harvesting tools or mechanical methods that could harm the trees during the picking process.

After harvesting, the olives are placed in bags and transported to the mill, where they are are cold-pressed into pure, natural extra virgin olive oil.

The Olive Oil Production Process:

1. Collection & Transport

The olives are placed in crates and transported to the factory, where they enter the production line through a funnel.

2. Washing & Grinding

From the funnel, the olives move to a conveyor belt for washing. After washing, they are weighed and sent to a machine where they are pressed and ground to the desired texture.

3. Mixing & Oil Extraction

The ground olive paste is then transferred to a screw mixer, where it is stirred for about an hour under a controlled temperature of 26°C. This process releases the oil from the olive cells that encapsulate it.

4. Separation Process

The olive paste is separated into oil, solid residues, and water in a horizontal separator. The extracted oil is then passed through a vertical separator, which removes particles and sediment, giving it a clearer appearance. A small amount of water is also removed during this process.

5. Storage & Maturation

The pure olive oil is stored in containers at the factory before being transferred into large oil barrels. After a few months of maturation, the oil is bottled and ready for consumption.
